Fried Cauliflower Rice Recipe

- 1 tablespoon sesame oil
- 2 eggs
- ¼ cup red onion, chopped
- 3 cups cauliflower rice
- ¾ cup frozen peas and carrots mixture
- 4 green onions, diced
- 2 tablespoons soy sauce or gluten-free substitute
- 1 tablespoon orange juice
- 1 tablespoon honey
- Heat oil in large skillet over medium heat.
- Beat the eggs and then pour them into the skilled.
- Cook, stirring a couple of times.
- Once eggs have finished cooking, set them aside.
- Add the onions to the pan and cook over medium heat until soft, approximately 4 minutes.
- Add in the cauliflower rice, peas, carrots, and scrambled eggs. Stir to mix.
- Then drizzle the soy sauce, orange juice, and honey over the rice mixture. Stir to coat.
- Cook for 5-6 minutes before removing from heat to serve.
