Pork Roast with Sauerkraut and Sweet Potatoes

Ingredients
  • 2 pounds of pork roast, cut into ~4 oz. pieces
  • 2 sweet potatoes, coarsely chopped (you can substitute 4 carrots, peeled and cut into large chunks)
  • 4 potatoes, coarsely chopped
  • 1 small onion, quartered
  • 1 - 32 ounce jar sauerkraut, undrained (I buy a brand in a glass jar.)
  • ½ cup water
  • 2 Tablespoons brown sugar
  • 2 Tablespoons catsup
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • ¼ teaspoon pepper
Directions
  1. Brown meat. While the meat is browning, I chop the vegetables. After the meat is browned, put it in the pressure cooker
  2. Then add the potatoes and onions.
  3. Pour the sauerkraut and water over the meat and potatoes. Add the brown sugar, catsup, and spices.
  4. Put the lid on the pressure cooker. Cook over high heat and bring it to high pressure. Adjust heat to keep it at high pressure and cook for ten minutes. Remove from heat, place pressure cooker in the sink and run cool water over it until all pressure has been released. Remove lid, with the pot tilted away from you, in case more steam escapes.
