Fresh Salsa

  • 3 cups fresh diced tomatoes
  • ½ cup diced onion
  • ¼ cup diced bell pepper
  • ¼ cup finely chopped fresh cilantro
  • 2 tablespoons diced deseeded Anaheim (mild) or jalapeno (hot) pepper
  • 2 cloves garlic, minced
  • the zest of one lime
  • the juice of one lime
  • pinch of salt
  1. In a medium bowl, combine tomato, onion, peppers, cilantro, and garlic.
  2. Add lime zest, lime juice and salt. Mix well.
  3. Cover and refrigerate for an hour before serving.
