Fresh Salsa

- 3 cups fresh diced tomatoes
- ½ cup diced onion
- ¼ cup diced bell pepper
- ¼ cup finely chopped fresh cilantro
- 2 tablespoons diced deseeded Anaheim (mild) or jalapeno (hot) pepper
- 2 cloves garlic, minced
- the zest of one lime
- the juice of one lime
- pinch of salt
- In a medium bowl, combine tomato, onion, peppers, cilantro, and garlic.
- Add lime zest, lime juice and salt. Mix well.
- Cover and refrigerate for an hour before serving.
