  • 1 cup brown rice flour
  • 3/4 cup tapioca flour
  • 1/4 cup potato starch
  • 1 teaspoon xanthan gum
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon seasoning salt
  • 1 cup milk or rice milk
  • 2 eggs
  • 1/2 cup olive oil
  • 1/2 cup chopped pepperoni
  • 1/2 cup cheese or dairy-free cheese
  • 1/2 cup diced tomato
  • 1/4 cup diced bell peppers

Instructions

Directions:

  • Preheat oven to 375. Grease the muffin tins.
  • Mix dry ingredients in a large bowl.
  • Add milk, eggs, and oil to dry ingredients. Thoroughly combine.
  • Stir pepperoni, cheese, tomatoes, and peppers into batter.
  • Spoon the batter into greased muffin tins. Fill the muffin cups 2/3 full.
  • Bake at 375 degrees for 25 minutes or until tops are brown and muffins are cooked through.
  • Let rest for 5 minutes before serving.
