Ingredients
4cupschopped cabbage
2cupsdiced cooked corned beef
2cupssliced carrots
1/4cupdiced onions
1cupcorned beef drippings or beef broth
1tablespooncornstarch
32-ouncebag of tater tots
1/2teaspoongarlic powder
1teaspoononion powder
1teaspoonparsley
Instructions
Preheat your oven to 450 degrees and grease a 9×13 casserole dish.
Add the cabbage, corned beef, carrots, and onion to the greased casserole dish. Toss to mix.
In a small pot, whisk together the corned beef drippings and corn starch. Cook over a medium heat until it reaches a boil. Lower the heat and simmer until the mixture thickens into a gravy.
Drizzle the gravy over the corned beef and vegetables.
Place a layer of the frozen tater tots on top of the corned beef and vegetables. Sprinkle the garlic powder, onion powder, and parsley over the tater tots.
Place the casserole in the oven and bake for 35 minutes or until the tater tots are crispy and the carrots are al dente.
