Preheat the oven to 400°F. Line a baking sheet with parchment paper and top it with a wire rack. Set it aside.
Slice the jalapeños in half lengthwise and remove the seeds and membranes using a spoon.
Add the cream cheese, shredded cheese, crumbled bacon, green onions, salt, pepper, garlic powder, and paprika to a bowl and mix until well combined.
Use a spoon to fill each jalapeño half with the cream cheese mixture.
Take half of a bacon slice and wrap it around a filled jalapeño. Place it onto the wire rack you prepared earlier. Repeat until all of the remaining jalapeños have been wrapped with bacon.
Bake for 20-25 minutes, or until the bacon is crispy. For crispier bacon you can broil the poppers at the end on high for 2 minutes.
