of rolled oats
1/2
cup
of lemon Greek yogurt
1/3
cup
vanilla almond milk
or cashew milk

teaspoon
lemon zest
1
teaspoon
of poppy seeds
Modifications: If you use unsweetened almond milk or regular milk
add 1 tsp of honey and 1/4 tsp of vanilla.
Instructions
Zest one lemon
Add the rolled oats to a mason jar or another lidded container.
Add the vanilla almond milk and Greek yogurt. Stir until thoroughly mixed.
Add the lemon zest and poppy seeds. Stir until thoroughly mixed and seal the container.
Refrigerate overnight or until the liquid is absorbed and oats are soft (6-8 hours). Serve cold.
