Ingredients
1cupvegetable broth
5poundspotatoeswashed, peeled, and cut up
8tablespoonsbutter
1/2cupHalf and Half + more if needed
1/2teaspoonsalt
1/4teaspooncoarse ground pepper
Instructions
Add the vegetable broth to the Instant Pot. Then add the cut-up potato pieces.
Seal the lid and turn the valve to sealed. Select the “high-pressure cooker” button or the “manual” button. Ensure the high-pressure feature is lit. Then set the timer to 10 minutes.
When your Instant Pothas stopped cooking, use a potholder to open the valve to quickly release the steam. Ensure all steam has been released and then carefully remove the lid.
Use a potato masher to mash your potatoes.
Add the butter, half and half, salt, and pepper to the potatoes. Stir until the ingredients are fully incorporated.
