Steak and Potato Soup

Ingredients

steak
3-4
medium russet potatoes
rough chopped

cup
carrots
chopped or sliced into coins

oz.
can diced tomatoes

beef broth
How make Beef Broth
1
small onion
diced
2-3
cloves
garlic
crushed
1/4
cup
grated Parmesan cheese
1
tsp.
Oregano
salt and pepper to taste
Instructions
Use leftover steak or prepare steak by grilling, broiling, or pan frying it. Dice the steak into bite sized pieces.
In a large soup pot sauté olive oil, garlic and diced onion, until golden brown.
Stir in diced potatoes, cook for 2 minutes.
Add steak, carrots, diced tomatoes, broth, oregano, salt and pepper- simmer over low for 45 minutes.
Add grated parmesan cheese.
