This cut out cookie recipe is a variation on classic Linzer cookies. It has 2 cookies with cherry jam sandwiched in between. We've used alphabet cookie cutters to spell LOVE on the top cookie.

Preheat the oven to 350 degrees.
Cream together the butter and sugar until smooth.
Add in the egg, and vanilla extract, then beat until blended.
In a mixing bowl, combine the ground pecans, flour, salt, and cinnamon. Stir to combine well.
Add the dry ingredients into the wet mixture, and beat on high until just combined.
Separate the dough into two sections, wrap each in plastic wrap, and place the dough in the freezer for about 30 minutes. This will make it easier to handle.
Remove one half of the dough from the freezer, and roll it out to about ¼ of an inch thick on a well-floured surface.
Use a round cookie cutter to cut out individual cookies.
Place those cookies on a parchment lined baking sheet, and bake for 10-12 minutes until crisp and golden brown.
While that batch of cookies is baking, roll out the other half of the dough, and use a round cookie cutter to cut out individual cookies again.
This time, use small letter-shaped cookie cutters to cut out the shapes of different letters in the center of the round cookies. You can spell out any Valentine’s themed words or phrases that you like.
When the first batch of cookies has finished baking, place the cookies with the letter cut outs onto the lined baking sheet, and bake them for 10-12 minutes.
Cool all of the cookies completely, and then place a thin layer of cherry jam on the solid round cookies.
Place a cookie with a letter cut out on top of the jam topped cookie to form one sandwich cookie.
Sprinkle the cookies with a layer of powdered sugar for garnish and serve immediately, or store in an airtight container.
