Ingredients
Salad Ingredients:

salad greens

large apples
cored and cut into bite-size pieces

pieces
of cooked bacon
crumbled

chopped walnuts

tablespoons
grated Parmesan cheese
Salad Dressing Ingredients:
¼
cup
walnut oil
or other mildly flavored oil
¼
cup
apple juice

tablespoon
apple cider vinegar
or your favorite vinegar

teaspoon
dijon mustard
or ½ t. dry mustard
¼
teaspoon
coarse ground black pepper
Instructions
In a small jar or cruet, combine all of the salad dressing ingredients and shake well.
In a large bowl, combine the greens, apples, bacon, walnuts, and cheese.
In a small jar (with a tight-fitting lid) combine the oil, apple juice, vinegar, mustard, and pepper.
Shake the dressing well.
Drizzle the dressing over the salad.
Toss thoroughly and serve immediately.
Notes
As a meal, this will serve four. As a side dish, it will feed up to eight.
