While the pasta is cooking, pour olive oil in skillet. Add tofu pieces. Sprinkle the tofu with Cajun spice mix and toss to coat. Add bell pepper and onion and cook over a medium flame until the onion is translucent. Approximately 4 -5 minutes.
Once the pasta is done, drain.
Add pasta, black-eyed peas, and vegetable broth to the skillet and cook until the black-eyed peas are heated through. Approximately 2 - 3 minutes.
