Preheat oven to 400 degrees Fahrenheit. Coast a 13x9 casserole dish with olive oil.
Wash, dry, and cut sweet potatoes into bite-size pieces. You don't need to peel sweet potatoes. Place the sweet potato pieces into the greased casserole dish.
Add the honey to a small bowl. Stir in the chai spice. Slowly stir in the apple juice until thoroughly combined.
Drizzle the honey-chai mixture over the sweet potatoes. Toss to ensure the pieces are evenly coated.
Cook at 400°F for 30 minutes, tossing after 15 minutes to coat with the honey chai mixture.
Remove from the oven and toss one more time before serving.
