Chili Dog Cornbread Muffins

Ingredients

  • 1 Box of Jiffy Cornbread Mix
  • 1 Medium size Yellow Onion diced
  • 1 1/3 Cup of shredded Sharp Cheddar Cheese divided
  • 1 tablespoon Cracked Black Pepper
  • 1 1/2 Cups of your favorite Chili store brought or made from scratch

Additional Items:

  • Sour Cream
  • Parsley
  • Olive Oil

Instructions

  • Using a pastry brush oil muffin pan.
  • Follow directions on the Jiffy Corn Muffin Mix, then spoon corn muffin batter into muffin tin (fill individual cupcake holes about 3/4 full).
  • Spoon in a tablespoon of chili and hotdog mixture, add 1/2 tablespoon of onion and top with shredded cheese.
  • Bake in a 350 pre-heated oven for 15-minutes.
  • Let cool and serve with a dollop of Sour Cream.
