Crock-Pot Corned Beef and Cabbage Recipe with Red Potatoes
This easy recipe for slow cooker corned beef and cabbage with red potatoes cooks low and slow while you go about your day. You just need to pop the cabbage in an hour before you are ready to serve dinner.

Place the corned beef brisket in the bottom of the slow cooker with the fat side up.
Pour half of the beef broth over the brisket. Then sprinkle half of the spices over the brisket.
Place the potatoes, onion, and garlic around and on top of the corned beef. Pour the remaining beef broth over the potatoes and sprinkle the remaining spices over the vegetables.
Cook on low for 7 hours.
Add the cabbage to the slow cooker. Ladle some of the broth over the top of the cabbage wedges.
Cook on low for 1 hour.
Slice the corned beef and serve with the potatoes and cabbage.
Notes
Corned Beef Gravy Recipe
Use the drippings from the corned beef to make gravy. Ingredients:
1 cup Corned Beef drippings
1 tablespoon cornstarch
Directions:
After you have removed the meat and veggies from the slow cooker, take 1 cup of the corned beef drippings and add it to a small sauce pot.
Use a whisk to blend the cornstarch into the drippings.
Cook on medium-low heat until it reaches a boil.
Lower flame and boil until it thickens, approximately 2 – 3 minutes.
