5grissini breadsticks
7 1/2ounceschorizo
7ouncesblack diamond cheddar
2ouncescheddarsquare
6-7lettuce leaves
a little bologna

Instructions
Cut the edges off a square of cheddar cheese forming an octagon. To create the face, add bologna cheeks and a piece of sweet (or hot) pepper for the nose. Add olive eyes, eyebrows, and a mustache. Add a drop of mayonnaise for the pupils. Place the face on the top of a serving board.
Cut a 1-inch section of the braid cheese and separate the fibers. Arrange the Nutcracker's hair. Arrange the grissini breadsticks. Cut the chorizo in half lengthwise and arrange them like arms.
Form 5cm diameter cylinders from the Brie. You will need 4 of them. Use 2 for the cuffs and 2 for the epaulettes. Arrange the salami overlapping at the bottom of the board to serve as a trivet. Trim the waxy rind from the black cheddar and form it into a belt.
Cut the black diamond cheese into small pieces and arrange them on the board in the upper right corner along with the remaining brie. Form the olives into a hat. Fill the remaining empty spaces with pretzels, crackers, and lettuce leaves.
Notes
Make-Ahead Tip:You can make the Charcuterie Board ahead of time. Just leave off the pretzels and crackers until right before you serve it, so they don't get soggy. Then wrap the board in plastic wrap and refrigerate until shortly before your party. After you remove the plastic wrap, add the pretzels and crackers.
