Preheat the oven to 350 and line a 12 cup muffin tin with paper baking cups and set aside.
In a small bowl, combine flour, baking soda and salt and mix well. Set aside.
Add butter and sugar to a mixing bowl and beat until fluffy, about 3-5 minutes. I beat mine for a minute, scrape down the sides and repeat 3 more times. Add eggs, one at a time and beat well after each egg, scraping down the sides. Add vanilla and beat well.
Add flour mixture and beat just until combined.
5, Using a 3 tablespoon portion scoop, fill each baking cup (about 3/4ths full).
Bake for 15-18 minutes or until a tooth pick inserted into the center comes out clean.
Remove from oven and let stand to cool before frosting.
