Ingredients

chicken breasts
trimmed

rhubarb
cut into 1/2-inch thick pieces

sugar

cornstarch
1 1/2

water

teaspoons
lemon juice
Instructions
Combine cornstarch, sugar, rhubarb and water in a saucepan.
Cook and stir over medium heat until mixture boils.
Cook until clear and thickened, about 2 minutes.
Add lemon juice. Set aside.
Melt butter; stir in cinnamon and nutmeg.
Place chicken in a 13x9 baking dish.
Brush with butter mixture.
Bake uncovered in 375 degrees oven for 30 minutes.
Spoon rhubarb sauce over chicken.
Return to oven and bake 20 minutes longer.
