Baked Chicken With Rhubarb Sauce

Rhubarb gives a savory twist to this baked chicken recipe.

Baked Chicken With Rhubarb Sauce Recipe

Ingredients:

  • 6 chicken breasts, trimmed
  • 2 Tablespoons butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 Cups rhubarb, cut into 1/2-inch thick pieces
  • 1/3 Cup sugar
  • 1 1/2 Tablespoons cornstarch
  • 1 1/2 Cups water
  • 2 teaspoons lemon juice

Directions:

  1. Combine cornstarch, sugar, rhubarb and water in a saucepan.
  2. Cook and stir over medium heat until mixture boils.
  3. Cook until clear and thickened, about 2 minutes.
  4. Add lemon juice. Set aside.
  5. Melt butter; stir in cinnamon and nutmeg.
  6. Place chicken in a 13×9 baking dish.
  7. Brush with butter mixture.
  8. Bake uncovered in 375 degrees oven for 30 minutes.
  9. Spoon rhubarb sauce over chicken.
  10. Return to oven and bake 20 minutes longer.

I serve this with Basmati Rice. I put the chicken on top of the rice and then spoon the rhubarb sauce over the chicken.

Side Dishes that go well with this include Strawberry Spinach Salad, Peas with Green Onions Basil, or Glazed Carrots.

I will come back and add a picture when I harvest my rhubarb. I wanted to post this now, so all of you who are harvesting rhubarb can use it in something other than desserts. ; -)
