Basmati Rice with Onion and Garlic

I often buy Basmati Rice Medley at Trader Joe’s ($1.89 for 16 oz.).  In addition to aged Indian basmati rice, it contains wild rice and some dehydrated vegetables. I think it makes a lovely base when I make a stir-fry. My oldest son doesn’t mind eating it with a stir-fry, but thinks it is too bland to be used as a side dish. And in all honesty, the dehydrated vegetables in the mix do add more color than flavor. So if I want to use this rice as a side dish I add onions and garlic to make it a bit more flavorful.

You can use this recipe with any aged Indian basmati rice.

Basmati Rice with Onion and Garlic

Yield: 6 servings
Prep Time: 5 minutes
Cooking Time: 20 minutes

Ingredients:

1 tablespoon olive oil

1/2 cup diced onion

2 cloves garlic, minced

1 cup basmati rice

2 cups water

Directions:

In a large pot, saute onion and garlic in olive oil.

Add rice and water and bring to a boil. Reduce heat to a simmer, cover with lid, and simmer for 15 minutes.

Remove from heat, keep covered, and let stand for 5 minutes. Fluff with fork and serve immediately.
