Blackberry & Peach Slow Cooker Cobbler

Peach and Blackberry Slow Cooker Cobbler Recipe

No dessert is more sentimental to me than cobbler.  As a little girl I remember Sunday afternoons after church at my Granny’s house and there always being a cobbler.  It didn’t matter what time of year it was, she always had a fruit cobbler on the table.  In the summer months you knew it was fresh fruit from her own orchard or local market, but even in the winter you didn’t have to miss out on her delicious cobblers.  She was a traditional Southern woman who spent hours of her summer slaving over a hot stove in her kitchen canning fruits and vegetables from her garden and local crops.  I loved the cold winter evenings with fresh from the oven peach cobbler made from her own canned peaches.  I will never forget being excited to learn how to make my own pie crust for cobblers at her house when I was a young teen.  This is her traditional cobbler recipe adapted to beat the heat of summer by using the slow cooker instead of the oven.

Blackberry & Peach Slow Cooker Cobbler

Ingredients

  • 1 ½ Cups Fresh Blackberries
  • 6-8 Fresh Peaches Peeled and Sliced
  • ½ Cup Brown Sugar
  • 2 Teaspoons Cinnamon
  • ½ Cup Water

Crust Ingredients:

  • 1 Stick Butter
  • 1 ¼ Cup Flour
  • 1 Teaspoon Salt
  • ¼ cup Water

Instructions

  • Spray Slow Cooker with Non-Stick spray.
  • Pour blackberries, peaches, brown sugar, cinnamon and water into slow cooker and stir until well combined.
  • In medium bowl blend together butter and flour and salt until well mixed and crumbly. Add in water slowly mixing until form a slightly sticky dough.
  • Sprinkle a clean surface lightly with flour. Pat out crust until ¼ inch thick. May shape to fit into slow cooker or simply slice into strips and place over berry mixture in slow cooker.
  • Cover and cook on lowest heat setting for approximately 1 hour and 45 minutes. Fruit will be cooked through with a thick syrup.
  • Pastry will be cooked but will be light colored and not browned like a traditional cobbler.

 

It will be rather ugly but will taste delicious!.  I prefer to use my spoon and break up the crust and stir into cobbler so every bite you take you have crust and fruit.  Serve by itself or with a scoop of vanilla ice cream.
