Chocolate Fixes Everything

Last Friday I made my Triple Chocolate Cake for a party that we hosted. It is so easy that it is my go-to cake when I am feeling pressed for time. I can rely on it to turn out perfectly every single time I make it… Except this time! When I turned it out of the bundt pan, some of it didn’t come out.

I knew all of our guests well enough that I felt comfortable serving an ugly cake, but at the last minute I decided to improvise a glaze that would either hide some of the damage or compound it.

Chocolate Glaze

Ingredients:

1/4 cup milk
1 cup chocolate chips
2 cups powdered sugar
1 tablespoon corn syrup
1/2 teaspoon vanilla
pinch of salt

Directions:

Combine chocolate chips and milk in a microwave safe container. Heat until the chocolate chips are melted. (It took about 1 minute and 45 seconds in my microwave. I stopped every 30 seconds to stir it and check how it was doing).

Remove from the microwave and stir well to ensure that the chocolate chips are thoroughly melted. Add powdered sugar, corn syrup, vanilla, and salt. Stir until the glaze is completely smooth. Slowly pour the glaze over the top of the cake.

    I have made your Triple Chocolate Cake the "right" way — but I must say anything with a bag of chocolate chips melted on top of it surely is improved. Looks delish.

    I vote for Quadruple Chocolate Cake!

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
