Dinner Menu Plan – Week of July 26th

April 2010 452We survived eating salads every night last week. The lettuce plants are still producing, but at a much slower rate, so salads will show up a little less frequently on our menu. Many other vegetables are reaching maturity and are making their way into our meals providing us with much desired diversity!

In the past I have shared the steps I take to create a menu and my philosophy that the best menu plan is the one that works for you. With that in mind, I wanted to share a resource that I recently discovered: Shopping and Cooking Efficiently. It is a free e-book created by Kim Danger of MoneySavers and is provided by More Mileage For Your Money by Uniroyal Tires. It includes chapters on menu planning, as well as shopping strategies and minimizing waste in the kitchen. Even though I have been planning menus for over 20 years, I am always happy to discover a new tip or recipe. I’ll be using Kim’s Easy Marinade when I do some batch grilling tomorrow.

Monday – Vegetable Garden Minestrone Soup and garden salad with Perfect Homemade Italian Dressing. Dessert is still TBD which leaves me with only a few more hours to come up with something brilliant!

Tuesday – Use Easy Marinade to make Grilled Chicken, Brown Rice, and Sautéed Summer Squash and Zucchini.

Wednesday – Use some of the left over chicken to make a stir-fry and serve over leftover brown rice.

Thursday – Use the last of the leftover grilled chicken to make Asian Chicken Salad

Friday – Vegetable Lasagna and Garden Salad

Saturday – Casual Game Party for my teen’s friends. I will serve homemade pizza, Pasta Salad, Garden Salad, and Fruit Salad. I think I will set make brownies and let the kids make their own brownie sundaes.

Sunday – Vietnamese Style Salad Rolls and leftover fruit salad

    Your menu sounds great. I still haven't started menu planning yet. I have no idea what we will be having this week–though I have a pantry full, a freezer full and a fridge full of food. Now just to decide what to make with all of it!! I used to eat salads for lunch and supper every day—I love them but sadly, they no longer love me!! I hope y'all have a wonderful week.

    fruit and nuts in salad are so great – your apple walnut salad picture looks so much like one I'm making tonight with pears and sugared almonds and pecans. If mine turns out as good as my friend's did, I'll post about it later this week. If no post, you'll know I chose the wrong pears…

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
