Recipes to Use Up Leftover Barbecue Chicken

I like making a huge batch of Barbecue Chicken. The first night we simply enjoy it as is. Then I shred the leftover barbecue chicken and use it to create “encore meals”. Now I am perfectly happy to mix up leftover barbecue chicken in a bowl with baked beans and sweet corn, but my family usually wants something that resembles a real dish.

Recipes that use leftover barbecue chicken

Below are a few of our favorite ways to use up leftover barbecue chicken. Some of the recipes do not start out with barbecue chicken but instead include steps to make it, which is great if you just have leftover chicken. If you have leftover barbecue chicken, you can skip that step and speed up prep time.

Recipes that Use Up Leftover BBQ Chicken

Use leftover Barbecue chicken in place of barbecue beef to make Barbecue Chicken Stuffed Potatoes.

Check out this recipe for Barbecue Chicken Penne Skillet from Laura on Real Mom Kitchen for an easy way to make BBQ chicken stretch in a meal another night.

Barbecue Chicken Quesadillas are an easy way to make lunch a hit the next day.

Cupcakes and Kale Chips has a good recipe for a kid favorite; BBQ Chicken Tostadas. These would also be a great lunch or after school snack.

Tasty has some delicious Loaded BBQ Chicken Nachos and while theirs uses chicken you cook when you make them, these could easily be made from leftover BBQ chicken.

    I make a BBQ chicken shepherd pie. I combine two boxes of Jiffy cornbread with 2 eggs and 2/3 cup of milk, i pour the mixture into a greased 9 x 13 pan and bake until done. Then I boil 6 medium potatoes and mash them with butter. I layer the pan by placing the BBQ chicken on the cornbread then a layer of mashed potatoes and top with Mexican shredded cheese. I then bake in a 375 degree oven for 25 minutes or until cheese is melted and bubbly.

    It would be good to have something more along the lines of an actually dinner. Not a snack or lunch, that is easy, but good.

      The Barbecue chicken should have been your dinner, these recipes are what to do with your leftover chicken from your dinner.
