Menu Plan Monday – Week of June 14th

Monday – Vegetable Garden Minestrone Soup and a Garden Salad. Tonight is dessert night and I am going to try my hand at making a gluten free version of Rhubarb Cake.

Tuesday – Grilled Pork Chops, Peas with Basil, and a Garden Salad

Wednesday – Use leftover pork in Chili Pork Burritos, Refried Beans, Spanish Rice

Thursday – I am going to thaw some  leftover grilled chicken to use in Chicken and Veggie Wraps (I am using Trader Joe’s Brown Rice Tortillas to make this GF and I will substitute garlic hummus for the kids who won’t eat mayo). I served this last week and they are very easy to throw together, so I am going to do it again since Thursdays are always hectic for us. I will serve it with a fruit salad.

Friday – We will be joining friends for a game night. I will bring a dish that is still TBD.

Saturday – Black Bean and Cauliflower Chili, Gluten Free Cornbread, and a Garden Salad. This chili is made in a crock pot, so I can start it before I go outside to play in the garden. The last couple of weekends I have got caught up in the garden and forgot to start dinner. I am having a hard time convincing my kids that eating dinner at 8:00 is fashionable. Am I the only one who has a hard time remembering to cook when the sun is out?

Sunday (Father’s Day)– Grilled Steaks, Butter Tossed Green Beans, Brown Rice, and a Strawberry Spinach Salad. I will serve Easy Triple Chocolate Cake for dessert.

    I love wraps — I don't think of them super often in menu planning, but they are a great lunch!!

    I'm so happy to hear the rhubarb cake worked for you as a GF version; please do post the recipe!!

    What a nice sounding menu. I wish we had a Trader Joe's around here.
    No, you aren't the only one who forgets to cook some times. I had a really hard time when we lived in Alaska and I occasionally still forget when we are involved in a project.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
