Menu Plan – Pantry Party Edition

July2010 293My pantry, freezer, and refrigerator are stocked and my garden is still producing, so this seems like an appropriate time to join Amanda at Coping with Frugality in her Pantry Challenge. I only plan to eat from the pantry for 2 –3 weeks, but it should allow me room in the budget for some delightful splurges later in the month (all natural, pasture raised turkey anyone?). I think I can make all of the below dinners without making a trip to the store. I will still be buying fruit, veggies, and dairy products as needed.

Monday – Quesadillas with Veggies and Cheese and Garden Salad

Tuesday – Swiss Steak

Wednesday – Use leftover Broth from Swiss Steak to make Beef Stew

Thursday – Pork Chops and Mustard Sauce with Mashed Potatoes and Peas with Green Onions and Basil

Friday – Pull from freezer and thaw Lentil and Cauliflower Chili . Serve with a garden salad.

Saturday – Use leftover bits of meat and veggies from through out the week and leftover mashed Potatoes to make a Shepherd’s Pie. Serve with a garden salad

Sunday – Honey Lime Pork Chops, Glazed Carrots, and Green Beans with Garlic

    Due to me not working right now, I have been trying to work from what is in the freezer and pantry. My challenge didn't pay off in the beginning of the year, but I think it will now since I have no choice!

    I should start making a list….

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
