Menu Plan – The Vacation Edition

When we vacation, I try to make arrangements so that we do not have eat every meal at a restaurant. We usually stay in a hotel that has at least a small refigerator and microwave, so we can prepare some simple meals in the hotel. Occasionally, we are fotunate enough to have a small kitchen in our lodgings. But just because I have access to a kitchen does not mean that I want to spend my vacation in the kitchen! So vacation meals are a compromise: instant oatmeal for breakfast and bagged salad for dinner.

 

Cheater Asian Chicken Salad
2 Bags Fresh Express Asian Salad Kits
1 Bag Raw Stir Fry Vegetables
10 -16 oz. precooked chicken slices

Cut the meat into bite size pieces. If the meat is frozen, microwave it for 2 – 3 minutes. While the meat is thawing, mix the rest of the ingredients (except Wonton) together in a large bowl. Add meat, mix well, serve cold. Those who are not gluten intolerant can add wonton to their salad.

Monday – Cheater Asian Chicken Salad

Tuesday – Pick up food from the Deli at Whole Foods Market for dinner on the beach

Wednesday – Cheater Chicken Taco Salad

Thursday – Soup Plantation

Friday – (driving home) Rice Bowls and Salads at Jack in the Box

Saturday – Grilled Steaks marinaded in Worcestershire Sauce Marinade, Roasted Sweet and Gold Potatoes, Summer Squash with Chives

Sunday – Use leftover steak to make Southwest Steak Salad with Honey Lime Dressing

    For me, vacations are about not having to cook! That being said, we do try to eat in a couple of meals. Since we have a time share, we get hotel rooms with full kitchens attached. We bring bagels for breakfast and snacks. We also bring reusable plastic bottles and a britta filter to make water bottles. We eat most of our other meals out, but if we buy from the local store while we're there. It doesn't make sense for us to lug it all with us.

    However, all of this goes out the window when we go to Disney World! We eat out for all of our meals. Since we stay right on Disney property (courtesy of our time share), it can get pretty pricey. We've started getting the Disney meal plan. It's still expensive, but for Disney, it's a bargain.

    I love your ideas for vacation meals! We usually camp for our vacations, so cooking on our camp stove is usually what happens at mealtime! But when we are away at a hotel for a few days, going out to eat for every meal gets old! I'll have to keep these ideas in mind!

    By the way, thanks for stopping by my blog and commenting on my Roasted Garlic and Potato Soup recipe! It WAS so easy and very tasty! Sorry it's taken me so long to reply…life with a 10 month old!

    If we're doing a "hotel vacation" instead of our usual camping, we try to stay at places that offer free breakfast, and have dinner in our room in order to save on meals. We usually eat lunch out; it's less expensive than dinner.

    Great ideas! I prefer to have a kitchenette as well when we vacation..but generally our vacations are tent camping and then it's hubby's turn to be the family chef! 🙂

Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
