Menu Plan Week of April 8

How to Create a Menu Plan - Tips for creating a menu planOn Monday, I will batch broil chicken and  freeze some for busy nights and use  the rest  in recipes through out the week. I will be using in-season produce that I have found on sale at my local stores. For a list of in-season produce, check out the April Money Saving Guide.

I have a printable weekly menu plan and shopping list that you can download to make organizing your meal plan and grocery shopping a little easier.

 Monday – Broiled chicken, Basmati Rice with Onion and Garlic, and  Asian Coleslaw.

Tuesday – Use 2 broiled chicken thighs in a Chicken and Mango Salad with a Creamy Cilanto-Lime Dressing.

Wednesday –   Swiss Chard and Garbanzo Bean Soup. Serve with a garden salad.

Thursday – Use leftover coleslaw and 2 broiled chicken thighs to make Asian Chicken Salad Wraps.

Friday – Salmon and Broccoli Stir Fry served over leftover rice.

Saturday – Cabbage Roll Soup with Turkey. Serve with a garden salad.

Sunday – Swiss Steak

Another tool that is available to help is ZipList. I created a video, showing how I use ZipList to save recipes, make meal plans, and create shopping lists.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
