Menu Plan – Week of August 2nd

This week I am trying three new recipes: Double Bean Stuffed Bell Peppers, Paella with Tomatoes , and Summer Pesto Pizza . Each of theses recipes calls for ingredients that I have growing in abundance in my garden right now. So these recipes are win – win. I get to experiment while saving money on groceries.

Monday – Double Bean Stuffed Bell Peppers

Tuesday – Crockpot chicken and vegetables

Wednesday – Paella with Tomatoes and salad.

Thursday – Use leftover chicken to create Fiesta Chicken Salad. Serve on a bed of lettuce.

Friday – Summer Pesto Pizza and salad.

Saturday – Grilled Steaks, Herb Roasted New Potatoes, and Butter Tossed Green Beans

Sunday – Use leftover steak to make Southwest Steak Salad with Honey Lime Dressing.

    Your pear/nut salad sounds heavenly. Too bad my hubby really doesn't like either… probably something for me to make for my work lunch I guess 🙂

    Thank you Alea. That helps me. I haven't seen any horn worms only the wasps. There will sometimes be 6-10 on there at a time. We are in a rural area and have tons of wasps, bees, hornets, etc. Which is a little scary for me since I am allergic. But I know it is a good thing for pollination and what not. Is there a certain time the worms are out?

    The wasps are probably there to lay eggs in the hornworms that are feeding on your peppers: http://aggie-horticulture.tamu.edu/galveston/beneficials/beneficial-04_braconid_wasp_on_hornworm.htm

    The wasps are good, the hornworms are definitely bad, except as incubators for more wasps. 😀

    The ring around the top of your tomato sounds like sunscald. They should be fine as long as a secondary parasite doesn't infect the weakened area.

    Ooh it all sounds so yummy! I have a question. How can I get wasps to leave my bell pepper plant alone. They have destroyed the leaves. They don't touch the peppers themselves though. Also, what causes funky rings around the tops of tomatoes? Just thought you might know lol.

    I'm trying a new pasta dish tonight! Nothing fancy, but I came across it when I was trying to find more meatless recipes. It calls for grape tomatoes which just happened to be on sale this week. I love it when that happens. 🙂

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
