Menu Plan – Week of August 30th

mealplanmonday_v2This week my primary goal is to use up as many vegetables from my garden as possible. My second goal is to create enough food that my husband and oldest son will not starve when I go out of town this weekend with the other kids. Instead of planning my meals so that leftovers can be rolled over into “encore meals”, I will be serving one dish meals that my  husband and son can easily reheat for lunch and dinner.

Monday – Chard and Vegetable Bake with Quinoa and Mushroom Topping and Garden Salad

Tuesday – Chicken and Quinoa Waldorf Salad with Creamy Maple Vinaigrette and Fruit Salad

Wednesday – Summer Garden Ratatouille and Garden Salad

Thursday – Tomato Pie (using my gf corn bread recipe) and Garden Salad

Friday – Zucchini Pizza and Fruit Salad

Saturday & Sunday – Mama’s out of town

    Since the 2 family members who are staying home can eat gluten, I should send them to the Olive Garden or some other gluten heavy restaraunt that they like. Thanks for the idea!

    I am really leaning toward making the zucchini pizza this week…now, to find a night that my son won't be eating with us, because anything too heavily "casseroley" does not bring a smile to his face!

    Have a great time out of town.

    And yes, I make some kind of a plan for them when I leave town…I leave lists of ideas and prepped-ahead items, and usually throw in an option to go to a restaurant that isn't my favorite. (Say, Carl's Jr.?!) Honestly, it's been so long since I've been out of town without my family, I think I need to create a trip just so I can make them a little menu plan! ha!

    Lovely sounding menu. I bought some quinoa but haven't fixed it yet. I should do that soon though. I do a little of both when I go out of town. It really depends on how much notice I have that I have to leave. Have a wonderful week.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
