Menu Plan – Week of August 9th

mealplanmonday_v2When I made last week’s menu plan I forgot that my husband was going to be on travel most of the week. I also quite conveniently forgot that I was celebrating a birthday. So meals were shifted around and some were pushed back into this week, like Southwest Steak Salad with Honey Lime Dressing.

This week I am experimenting with creating “noodles” and “rice” out of different types of vegetables. Have you used vegetable substitutes for rice and pasta?

Monday – Swiss Chard and Garbanzo Bean Soup, Salad, and for dessert leftover Garden Party Cupcakes.

Tuesday – Use leftover steak to make Southwest Steak Salad with Honey Lime Dressing

Wednesday – Stir Fry Served on Spicy Squash Noodles

Thursday – Herbed Chicken on Vegetable Confetti

Friday – Visiting friends

Saturday – Pan Fried Garlic Sole, Herb Roasted New Potatoes, and Italian Green Beans

Sunday – Use leftover sole in fish tacos, Spanish Cauliflower “Rice”, and Black Beans

    My husband is out of town this week. But, I think I want to try that salad next week. He'd love it- and so would I. Not too sure about the kids, though… but that won't stop me.

    I'm looking forward to reading about your experiments with veggie "carbs."

    I have done the cauliflower rice thing and I like it but it's one of those things where I thought "No one is fooled by this, just call it what it is!" Same with spaghetti squash, but I do love it =)

    How do you do your fish tacos? I looove fish tacos but I'm never sure if I'm doing it "right" haha!

    Belated happy birthday wishes! It seems as though there have been an inordinate number of birthdays in the past two weeks!

    The Southwest Steak Salad still sounds good, and I'm looking forward to seeing your cupcake photos!

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
