Menu Plan – Week of July 12th

mealplanmonday_v2Last week I did not create a menu plan. That oversight, coupled with a busy week, meant that I ended up sending my teens to get take out TWICE last week. We go whole months with out eating out, so twice in one week is pretty shocking for our household. I am determined not to make the same mistake this week, so below you will find our dinner menu for this week:

Monday – Guadalajaran Swiss Chard Quesadillas, Rice and Black Beans. I will be making an Earthquake Cake for dessert.

Tuesday – Pork Roast, New Potatoes and Green Beans, and Strawberry Spinach Salad (A lot of this food is coming directly from my garden, so I am going to be insufferable as I point out each item that I lovingly grew to my family.)

Wednesday- Spaghetti, Salad, and Gluten Free Crusty Boule Bread

Thursday –Use leftover pork roast to make Crock Pot Pulled Pork, Baked Beans, and a Garden Salad

Friday – Cheese Pizza using this gf recipe for the dough, fruit salad and a garden salad

Saturday – Use leftover spaghetti sauce, baked beans and black beans to make Miracle Leftover Chili, Gluten Free Crusty Boule Bread and salad

Sunday – Grilled Ahi Tuna, Brazilian Rice and Peas, and a salad

My lettuce is making the climb that comes right before it starts to flower, so next week’s menu is going to be salad heavy. If you have any salads that you love, please leave a link in the comments.     I envy you for the fresh homegrown veggies. I have no luck here with gardens, but maybe next year.

    Our favorite salad meal is a Fiesta Chicken Salad. I usually make this when I have leftover grilled chicken and grilled corn on the cob. I cut the corn off the cob and make a salsa with (rinsed, drained) black beans, onion, jalapeno, cilantro and lime juice(I also add cucumber, tomato, celery or whatever else I have needing to get used.) Top big bowl of greens with warm diced chicken, the corn salsa, sprinkle of cheese if desired, Salsa Ranch dressing, and crumbled tortilla chips. Enjoy!

    Thanks for the reminder. I have been worrying about what I am going to bring to the church picnic on Sunday and your meal plan just reminded me that my husband had requested I make strawberry spinach salad for the next potluck. Dilemma solved!

    I have a menu plan, but I'm having trouble using up all the veg. that are coming in from the garden, so I've been having to change it up quite a bit. I think I'll try the Guadalajaran Swiss Chard Quesadillas tomorrow for lunch. Thanks for posting it!

    Your menu sounds wonderful. I have been leaving things to last minute myself and it is so frustrating. I know I have to cook every day but I put off making a decision until late in the day. I need to get into the menu plan mode myself. I'm the only one who drives–besides Kevin but he is at work during the day–so we don't get take out often–I hate the drive to get food more than making a decision on what to cook.

    Your menu sounds great! I know how it is not to have a plan–in fact, I haven't yet planned beyond tonight's dinner–but I'll finish that today.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
