Menu Plan – Week of November 22

mealplanmonday_v2 Last week I did not get a menu up because I was not feeling well. In fact, I spent most of the week sick. Even though I did not feel up to cooking, my family still ate home cooked meals because I had extra meals tucked away in the freezer. All they had to do was thaw, reheat, and add a salad.

The weekend after Thanksgiving is a great time to use the leftovers to create freezer meals to use during the hectic month to come. You can create casseroles, soups, or just freeze the turkey meat in 2 cup portions so it is ready to add to a recipe. Use turkey in any recipe that you would normally calls for chicken. I will be sharing some of my favorite leftover turkey recipes through out the week, so come back if the only way you usually eat leftover turkey is in sandwiches. 🙂

Monday – Sweet Potato and Lentil Burrito and Salad

Tuesday – Tacos, Black Beans and Rice

Wednesday – Use leftover taco meat and black beans to make Taco Salad

Thursday – Thanksgiving Dinner – I have already posted the menu here.

Friday – Use leftover turkey to make Tuscan Turkey Soup  and Salad

Saturday – Use leftover turkey to make Curried Turkey Salad. Serve on a bed of greens.

Sunday – Use leftover turkey to make Turkey Vegetable Rice Bake  and Salad

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
