Menu Plan – Week of November 8th

greenmpm[1] We barely made a dent in our freezer last week, so we are continuing with another pantry week.

The first time my family saw me making Addictive Sweet Potato Burritos by Laura at I’m Losing It Here, they expressed doubt about the combination of ingredients (In their defense, even I thought cumin, soy sauce, and mustard rather odd seasonings for sweet potatoes) but the recipe lived up to its name. It inspired me to think outside the box when working with sweet potatoes and yams. I shared the resulting Pork Roast with Yams on $5 Dinners. I had some leftover yams from the dinner and decided to see how they would work in Addictive Sweet Potato Burritos and the flavors blended wonderfully. It is no longer a vegetarian dish since I cooked the yams with pork, so I would not serve it when I have vegetarians over, but that did not bother anyone in our family since we are only occasionally “economic vegetarians”.

Monday – Creamy Leek and Potato Soup and garden salad

Tuesday – Pork Roast with Sweet Potatoes

Wednesday – Pasta with Slow Cooker Marinara Sauce and garden salad

Thursday – Use leftover sweet potatoes to make Addictive Sweet Potato Burritos

Friday – Use leftover pulled pork from the freezer. Serve with leftover baked beans pulled from the freezer ( yes, you can freeze cooked beans) and Serendipitous Asparagus.

Saturday – Dinner with friends

Sunday – Birthday Dinner for Grant, Menu TBD by the birthday boy

    Thanks for the link! I haven't made the burritos in a while, but think I need to get them back on the menu next week as I'll be buying sweet potatoes for Thanksgiving, and will just put a couple extra in the bag!

    Wow the addictive sweet potato burritos does have an interesting ingredient list. But, sounds like one I'll have to try.. 🙂

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
