September2010 333This week I feel like we are eating really well for very little! My garden is still chugging along producing organic vegetables for my family. I scored some great deals on grass fed beef that was marked for quick sale at our local grocery store. And I am taking advantage of the great sales on in season produce like cabbage and apples! I love it when I can buy big, fat sweet, organic apples for $1.29 a pound!

Monday – Angel Hair Pasta with Garden Vegetables

Tuesday – Beef Stew with Cabbage and Beirocks

Wednesday – Heather’s Arroz Con Pollo with black beans and salad

Thursday – Use leftover salad ingredients in Salad Rolls

Friday – Kefta and Browned Cabbage and Sautéed Summer Squash with Onions

Saturday – Grilled Steak, Roasted Sweet Potatoes with Cauliflower, and Sautéed Summer Squash and Zucchini

Sunday – Use leftover steak to make Fajitas

    I am going to add Costco to my list of errands tomorrow. i have been hearing about some great deals on organic food there lately.

    We still have tomatoes galore coming from the garden, but only have one zucchini left. After that it's pumpkins and then out comes the garden for the winter.

    We all loved the roasted cauliflower and sweet potatoes; cannot wait to try the angel hair pasta with garden vegetables next week.

    We are finally seeing some good prices on apples and peaches. I bought a dozen local (!) organic peaches at Costco last week for around 99 cents a pound.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
