My Menu Was Hijacked By a Snow Storm

February 2010 172 I am afraid that I spent more time feeding all of the animals on our property yesterday than I did my family. After fixing the horses heated water buckets, my husband jumped in and made waffles. There was much snacking on cookies and cocoa and we made a dinner of leftovers and popcorn, so nobody starved, but it was a highly disorganized kitchen day.

This storm is a good example of why we keep a stocked pantry! This week is an impromptu pantry week. Fortunately, we have plenty of fresh fruit, vegetables, and milk, even though this storm was not predicted until after 6 inches of snow coated my back yard. When I took this picture we were at a foot of snow, before the day was out we received more than 18 inches of snow!

Monday – Cuban Black Bean Soup and Salad

Tuesday – Orange Chicken, Rice, and Glazed Carrots

Wednesday – Black Bean and Cauliflower Chili and Salad

Thursday – Use leftover chicken rice and carrots to make Orange-Ginger Stir Fry Over Rice

Friday – Ahi Tuna, Roasted Sweet and Gold Potatoes, and Sauteed Asparagus

Saturday – Chicken and Artichoke Pizza and Salad.

    That is a huge amount of snow! Otherwise, looks like a particularly tasty week to be at your house.

    Your menu sounds great, as usual. And yesterday's menu sounds fun and yummy – I mean waffles, cookies & cocoa and popcorn all in the same day. Awesome 🙂 My kids would definitely have called that the "best day ever".

Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
