Repurposing Leftover Chicken

Today, I am sharing a speedier version of my Chicken and Broccoli Casserole recipe at $5 Dinners. I also shared a few ideas for saving time on dinner prep. My regular readers will not be surprised to learn that one of my tips is to plan ahead to use leftover meat in another dish. I dice leftover chicken and freeze it in 2 cup Pyrex containers. Why 2 cups of chicken? I don’t know, but for some reason that amount works well in a lot of my recipes.

    My go-to leftover thing for chicken is a casserole. I saute onions and celery…maybe carrots or mushrooms if I have them. Then I put them in a bowl. I add the cut up chicken. Then add a starch (rice or noodles) plus a vegetable (could be whatever is leftover…or frozen mixed vegetables). Add a can of 'cream of' soup…along with sour cream, milk or cheese. Taste it – add some spices if needed. Transfer to a 9 x 13 dish. Usually I sprinkle those durkee onions on the top. I bake it until it's warm (about 20-30 minutes) since everything else is already cooked.

    Chicken Fried Rice sounds really good! I love chinese food for breakfast. 🙂

    Cooking a whole chicken and using every thing is the most frugal way to serve chicken. which is important when you are buying pasture raised chicken!

    I love repurposing chicken – I almost always cook a whole chicken and then use the meat in several ways. My kids favorite is chicken quesadillas – easy and delicious! I also make chicken and noodles and chicken fried rice – all super simple especially when the chicken is already cooked!
