Alyssa is sharing her fast and easy tortilla pizzas:

Pizzas can come in various shapes and sizes and can include a large variety of ingredients. My family loves pizza so much that I have had to get very creative with pizza in order to keep satisfying their pizza cravings. I have discovered a variety of homemade pizza ideas and keep trying to find things they will love.

If your family is like mine and you like to have pizza on a regular basis then you want to have pizza ingredients on hand at all times.  However, if sometimes you don’t you have to improvise.  This pizza recipe was created as a result of improvising.  I didn’t have any pizza crust mix and I have not been successful yet at making my own pizza crust, therefore I was scrambling through the cupboards in order to find something else that would work.  I came across some tortillas and had a light bulb moment.  That’s when I decided to give tortilla pizzas a try.  The results were a hit.  Not only do I make Mexican pizzas with these now, but I also make any kind of pizza.  The tortillas make a great thin crust!

Tortilla Pizza Recipe

Ingredients:

package of flour tortillas (or brown rice tortillas)

jar of pizza sauce

2 cups of mozzarella cheese

your favorite toppings – My family enjoys bacon, ham, pepperoni, mushrooms, and spinach.

Directions:

Using the flour tortillas as a crust you will put these flat on your pizza pan, one per family member and then begin layering your pizza toppings.  Start with your pizza sauce and spread some on each tortilla.  Then add your favorite toppings and top with cheese.  You will bake these in a 350 degree oven until the cheese is melted and bubbly.  You will want to keep a close eye on these, however because they are thin they will cook quickly and you don’t want them to burn.

Welcome. I'm Alea!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
