I have come to recognize my dependence on barbecue. It’s like air, I got to have it. And so I went ahead and fired up the kitchen stove and cooked up some Winter St. Louis Pork Ribs. Please don’t judge me too harshly, I am weak. I can’t wait until summer to get some savory, falling off of the bone, sticky finger lickin’ good joy. With this sure-fire recipe, you’ll think it’s summer too.

Winter St. Louis Pork Ribs Recipe

I made a trip to our local butcher shop and I selected a nice slab of St. Louis-Style ribs. Don’t worry St. Louis-Style ribs just means they are spare ribs with the sternum, cartilage, and rib bones removed.  There’s a thing or two about this particular cut of ribs you should know. They’re a lot meatier and have a lot more marbling, which translates into higher fat. As the ribs cook the fat is rendered out and lends a wonderful flavor throughout the cooked rib meat. And although these ribs are cooked in the oven and not on the grill (boo hoo) the only thing they’re missing is the smoke imparted by the charcoal and hickory wood. I could use liquid smoke but that’s cheating and I am not a fan of liquid smoke anything. But still, these ribs are a pretty good stand-in until summer arrives and the smell of the real deal fills the air.

Ingredients:

  • 1 slab of St. Louis-Style pork ribs
  • 1 cup light brown sugar
  • 1 tablespoons herb and garlic seasoning
  • 1 tablespoon Old Bay seasoning
  • 1/4 cup coffee rub seasoning
  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion

Directions:

  1. Preheat oven. For this recipe, cook ribs at 400 °F for 2 hours and 350 °F for 1 hour.
  2. On a large clean surface let the ribs come to room temperature.
  3. Rub each side of the ribs with a tablespoon of EVOO.
  4. Mix seasoning with the brown sugar and rub each side with half of the mixture.
  5. Place length foil that is about 6 inches longer that each end of the ribs on the counter top.
  6. Peel and slice a yellow onion and lay the onions slices so they touch in a long line.
  7. Place the prepared rib slab on top of the onions.
  8. Fold the foil the ribs. We don’t want any of the juices to escape.
  9. Place the ribs on a high-walled cooking sheet and place on the center rack of the oven.
  10. Cook at 400 °F  for 2 hours. After two hours remove the ribs from the oven and expose the ribs by opening the foil so the top is exposed. Place the ribs back into the oven and reduce the temperature to 350 °F and cook for another hour.Winter St. Louis Style Pork Ribs- cook in oven
  11. Remove the ribs from the oven and allow them to rest for 15 minutes.
  12. Serve.
