My kids informed me that it had been too long since I had made them muffins for breakfast. I wanted to make them something hearty, something more than what my daughter calls “ugly cupcakes”.
I used oat flour and homemade jam in these muffins. Even though I was trying to make healthier muffins, I wanted an element of fun to make them special. I only added a teaspoon of jam to each muffin, but it was enough to give them a sweet filling.

Hope you had wonderful vacation. I like this gluten free muffins. How long I can store xanthan gum as I am not going to do lot of baking with them. I am planning to do some though.

I’m glad you submitted a muffin recipe in time for March’s muffin theme! These look great. My husband HATES jelly so he wouldn’t eat these, but I’m sure my kids would enjoy them.
