Gluten-Free Substitutions for the Recipes in Prep-Ahead Breakfasts and Lunches

Here are the gluten-free substitutions for the recipes in my latest cookbook, Prep-Ahead Breakfasts and Lunches.

Gluten-Free Substitutions for the Recipes in Prep-Ahead Breakfasts and Lunches

In my first cookbook, Prep-Ahead Meals from Scratch, I included gluten-free substitutions. With my second cookbook, Prep-Ahead Breakfasts and Lunches, I did not. It was a hard decision, but I just did not feel that I could put an asterisk next to a muffin or cake recipe and say use a gluten-free flour when I use homemade gluten-free flour mixes when adapting recipes to make them gluten-free.

Below are the Gluten-Free Substitutions for the Recipes in the cookbook Prep-Ahead Breakfasts and Lunches. Many of them are as simple as ensuring you are using gluten-free certified oats or a gluten-free substitute for soy sauce. However, some of the recipes will require you to use one of my gluten-free flour recipes to make a substitute flour to use in the recipes.

Be sure to check the packaging on all ingredients to ensure they are gluten-free!

Part 1 Make-Ahead Breakfasts

Chapter 1 Simple Egg Dishes and Breakfast Sandwiches

1. Oven Baked Scrambled Eggs – no substitutions needed

2. Mason Jar Lid Eggs – no substitutions needed

3. Sheet Pan Eggs – no substitutions needed

4. Pumpkin Chai Egg Puffs – no substitutions needed

5. Caprese Egg Cups – no substitutions needed

6. Pizza Breakfast Cups – no substitutions needed

7. Ham and Broccoli Mini Quiche with Hashbrown Crust – no substitutions needed

8. Italian Vegetable Mini Frittatas – no substitutions needed

9. Chipotle Egg Muffin Sandwiches – Replace English muffins with gluten-free muffins.

10. Cajun Egg Croissant Sandwiches – Replace croissants with the gluten-free bread of choice.

11. Greek Steak and Eggs Pita Pockets – Replace pita pockets with gluten-free pita pockets or gluten-free wrap.

12. Chimichurri Steak Breakfast Burrito – Replace the vinegar with apple cider vinegar. Replace the tortillas with gluten-free tortillas.

Chapter 2 Quick Breakfast Breads

13. Peanut Butter Chocolate Chip Blender Pancakes – Use gluten-free oat flour or make your own using gluten-free oat flour.

14. Lemon Chia Seed Waffles – Use this gluten-free cake flour in place of all-purpose flour.

15. Jalapeno Cornbread Waffles – Use this gluten-free cake flour in place of all-purpose flour.

16. Garlic and Rosemary Sweet Potato Pancakes – Use this gluten-free all-purpose flour in place of all-purpose flour.

17. Chicken Fajita Stuffed French Toast – Replace the sandwich bread with gluten-free bread.

18. Peaches and Cream Stuffed French Toast – Replace the sandwich bread with gluten-free bread. Use gluten-free vanilla extract.

19. Ham and Cheese Ranch Drop Biscuits – Use this gluten-free all-purpose flour in place of all-purpose flour.

20. Hummingbird Zucchini Muffins – Use this gluten-free cake flour in place of all-purpose flour. Replace old-fashioned rolled oats with gluten-free rolled oats. Use gluten-free vanilla extract.

21. Chocolate Hummingbird Muffins – Use this gluten-free cake flour in place of all-purpose flour. Use gluten-free vanilla extract.

22. Chai-Spiced Carrot Cake Muffins – Use this gluten-free cake flour in place of all-purpose flour. Replace old-fashioned rolled oats with gluten-free rolled oats. Use gluten-free vanilla extract.

23. Pumpkin Quinoa Muffins – Use this gluten-free cake flour in place of all-purpose flour.

Chapter 3 Hot and Cold Cereals that Satisfy

24. Strawberry Rhubarb Baked Oatmeal – Replace old-fashioned rolled oats with gluten-free rolled oats.

25. Apple Pie Baked Oatmeal – Replace old-fashioned rolled oats with gluten-free rolled oats.

26. Oatmeal Packets – Replace instant oatmeal with gluten-free quick oats. Use gluten-free oat flour or make your own using gluten-free oat flour.

27. Overnight Refrigerator Oatmeal – Replace old-fashioned rolled oats with gluten-free rolled oats.

28. Overnight Pumpkin Pie-Spiced Pecan Granola – Replace old-fashioned rolled oats with gluten-free rolled oats.

29. Carmelized Pear Slow Cooker Oatmeal – Replace steel cut oats with gluten-free steel cut oats.

30. Cinnamon Roll Slow Cooker Oatmeal – Replace steel cut oats with gluten-free steel cut oats. Use gluten-free vanilla extract.

Part 2 Make-Ahead Lunches

Chapter 4 One-Bowl Wonders

Batch Cooked Cauliflower Rice Recipes – no substitutions needed

31. Vegetable Fried Cauliflower Rice – Replace the soy sauce with a gluten-free soy sauce.

32. Greek Quinoa – Replace the Dijon mustard with a gluten-free Dijon mustard.

33. Cilantro-Lime Quinoa – no substitutions needed

35. Mongolian Beef and Broccoli Bowl – Use gluten-free soy sauce and gluten-free beef broth.

36. Bourbon Beef and Quinoa Bowl – Use gluten-free bourbon, soy sauce, and Worcestershire sauce.

37. Cajun Ranch Chicken and Quinoa Bowl – no substitutions needed

38. Mediterranean Chicken and Vegetable Bowl – Replace Dijon mustard with gluten-free Dijon mustard.

39. Turkey Taco Rice Bowl – no substitutions needed

40. Salmon-Berry Quinoa Bowl – no substitutions needed

41. Zucchini Parmesan Bowl – no substitutions needed

42. Sherry Pork with Bacon and Brussels Sprouts – no substitutions needed

Chapter 5 Salads on the Go

44. Chopped Chimichurri Steak Salad – Replace vinegar with apple cider vinegar.

45. Lemon-Dijon Chicken Pasta Salad – Use gluten-free rotini pasta. Replace Dijon mustard with gluten-free Dijon mustard.

46. Greek Steak and Lentil Salad – Replace Dijon mustard with gluten-free Dijon mustard.

47. Asian Chicken Quinoa Salad – Replace the soy sauce with a gluten-free soy sauce.

48. Catalina Chicken Taco Pasta Salad – Use gluten-free rotini pasta.

50. Salad Bar Vegetable Salad – Replace Dijon mustard with gluten-free Dijon mustard.

51. Chopped Barbecue Pork Salad – Use a gluten-free barbecue sauce and gluten-free ranch dressing.

Chapter 6 Must-Have Sandwiches, Wraps, and More

52. French Dip Grilled Cheese Sandwich – Use gluten-free horseradish. Use gluten-free bread of your choice. If you make the au jus, be sure to use gluten-free bouillon cubes.

53. Teriyaki Sliders – Use gluten-free teriyaki sauce, gluten-free soy sauce. Use the gluten-free rolls of your choice.

54. Chicken Marsala Pockets – Instead of using puff pastry, I recommend using this gluten-free pizza dough recipe.

55. Jalapeno Chicken Pita Pockets – Use gluten-free pita pockets or gluten-free wraps.

56. Honey Mustard Ham and Cheese Quesadillas with Broccoli – Use gluten-free mustard in place of the yellow mustard. Use gluten-free tortillas.

59. Ratatouille Grilled Cheese Sandwich – Use a gluten-free Italian Salad Dressing. Replace the Sandwich bread with a gluten-free bread.

60. Taco Cauliflower Rice Soup – Use gluten-free taco seasoning mix.

61. Carrot Soup with Lentils – Use a gluten-free vegetable broth.

62. Hearty Steak and Mushroom Stew – Use a gluten-free beef broth.

63. Buffalo Ranch Chicken Soup – Use a gluten-free chicken broth and a gluten-free hot sauce.

64. Chipotle Sweet Potato and Black Bean Chili – Use a gluten-free vegetable broth and a gluten-free chipotle seasoning mix.

65. White Bean and Chicken Minestrone Soup – Use a gluten-free vegetable or chicken broth. Also, ensure your Italian seasoning mix is gluten-free.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
