The Cream of the Crop: Dairy Free Delights

Zoe  at Z’s Cup of Tea is hosting this month’s Go Ahead Honey, It’s Gluten Free round up. This month’s theme is Cream of the Crop: Dairy Free Delights. I really appreciate this event as I have one child who is gluten intolerant, one who is lactose intolerant, and one who does not handle refined sugars very well. How I modify a recipe depends on which kids will eat it. My child who does not handle refined sugars well, does not like chocolate (yes, we have wondered if there could have been a mix up at the hospital!), so I don’t usually make chocolate treats sugar free.  Any recipe that they will all eat has to be gluten free, dairy free, and sugar free, so I am hoping to glean lots of new recipes from this carnival!

Even if you normally consume dairy products, you might find inspiration in some of the fat, sugar, dairy, and egg substitutions the contributors used in their recipes.You might even be tempted to try some of the interesting liquids like coconut milk, almond milk, juice, and rice milk. Although, I love me a big glass of organic milk to wash down a piece of chocolate cake, I have learned to appreciate the complex flavors that dairy substitutes like almond milk can add to a recipe. I contributed my Guilt Free Banana Muffins recipe, which is dairy free, fat free, sweetened with honey, and of course gluten free.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
