Italian Squash Salad

This Italian Squash Salad side dish is very easy and does not involve any cooking.

Italian Squash Salad in the Mixing Bowl

Italian Squash Salad Recipe

Ingredients:

  • 1 yellow squash
  • 1 zucchini
  • 1 small onion, finely chopped
  • 1/2 cup Italian dressing, add more as needed.

Directions:

  1. Use a vegetable peeler and cut lengthwise across the summer squash and zucchini to make very thin slices.
  2. In a medium bowl, combine squash, zucchini, chopped onion, and enough dressing to coat the vegetables.
  3. Put a cover on the bowl and let it marinate over night. Serve chilled.
This recipe is very flexible. You could use cucumber instead of the zucchini, add thinly cut carrot strips, or add fresh herbs from your garden. The possibilities are limited only by what you have in your garden or refrigerator.
