When fall rolls in I start seeing different squashes and gourds pop up in the stores and farmer’s markets and I get excited about the cooler weather. There is something so warm and inviting about this season that no other season has! Being that I am not a huge squash fan, I will admit I had a bit of a challenge when I wrote this post. The funny part is, as I was diving through the many recipes online on sites like Pinterest, I started to feel like maybe I could be a butternut squash fan. If you are a fan and are looking for new ways to eat this fall treat, here are 10 Amazing Butternut Squash Recipes to inspire you as well as tips on how to create the best butternut squash puree for freezing.

How to Puree Butternut Squash for Freezing:

Pureeing butternut squash is probably one of the easiest ways to save it for use later as it lends itself to all kinds of recipes from soups, to pancakes, and even sauces. Butternut squash is not ready to puree right out of the garden. For the easiest and best pureed butternut squash, I suggest baking it in the oven for 30-40 minutes until super tender at 325-350 degrees. You can do this either whole or cut the squash in half and cover each half with foil to prevent too much browning. When it is soft, use a large spoon to scoop out the flesh and puree with 2-3 tablespoons of butter to get it an even consistency. This will help it taste savory when you thaw it as well. Store it in the freezer in smaller containers for up to 4 months for best taste.
