I have been cutting back on the animal products that I consume. We have always eaten meatless meals 1 – 2 nights a week, but now I am trying to find more ways to work even more meatless meals into my meal plans. For a fresh take on meals, I have been substituting beans in some recipes for meat. In other recipes, I have used mushrooms as a filling meat substitute. However, when we have company over, we have found they often prefer something that looks and tastes a little more like meat and I have found that MorningStar Farms has a wide selection of Veggie Burgers. Don’t forget, just because you start with a MorningStar Farms veggie burgers doesn’t necessarily mean you have to make a burger. You can chop up the veggie burger and use it in a wide variety of recipes that call for meat.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
