Chicken and summer squash skillet recipe

Last week I attended the Savvy Blogging Summit and was away from home for 4 days. After 4 days of shifting on their own for meals, my husband and kids were all eager for me to cook dinner for them. I really wanted to accommodate them, and made plans to make Garlic chicken and Sauteed Squash. But I was so tired. As I was dicing the squash, I decided to try combining the ingredients from both recipes into one easy skillet dish. The result? A delicious dish that was on the table in less than 20 minutes!     Love the idea. I’m a huge summer squash (winter squash for that matter) fan. Looks like amazing flavours.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
