Cuban Chicken Sliders

Want to make some Cuban Chicken Sliders? I  guarantee you will love them! Okay, you have more than likely heard of the famous Cuban sandwich, right? It is an original sandwich creation made traditionally with chopped pork loin, layers of ham, slices of Swiss cheese, crispy pickles, and savory yellow mustard.  Now, we’re going to switch it up a bit with a little addition and subtraction. I am adding chopped chicken, and caramelized onions, and subtracting the pork loin. Got it? Okay, good.

These Cuban Chicken Sliders are tasty and fun-sized! Unlike a traditional Cuban, this recipe stacks ham, chicken, and caramelized onions on a toasted bun.

Legend has it that the cuban sandwich originated in either Cuba or in the Florida Keys (Key West) and migrated north from there as it gained in sandwich popularity. But for our version we’re adding chopped chicken instead of pork loin. For the most part we’re keeping just about everything else in tact.

Sliders are the perfect delivery system for our new play on the Cuban creation. We’ve also added grilled onions to jazz things up a bit. After you taste our Cuban Chicken Sliders we think you will be 100% and absolutely sold! Oh and another thing, we made the chicken in a Instant Pot, which means a meal done in a hurry without sacrificing on taste. That sounds like a pretty fantastic trade off to me.

Cuban Chicken Sliders Recipe

Ingredients:

  • 1 whole chicken
  • 1 package slider buns
  • 1/2 cup poultry brine
  • 1 tablespoon freshly cracked black peppercorns
  • 1 large onion, cut thin and caramelized
  • 1 cup chopped ham
  • 2 tablespoons light olive oil +  2  tbsp for toasting the slider buns
  • 4 tablespoons unsalted butter + 2 tbsp of melted butter for toasting the slider buns
  • mustard
  • sliced pickles

Directions:

  1. Thaw and rinse a 4-6 pound whole chicken and pat it dry using paper towels.
  2. Brush the entire chicken with the olive oil and rub on the poultry brine.
  3. Add a couple of tablespoons of extra virgin olive oil into the bottom of the Instant Pot and hit the sauté bottom.
  4. When the Instant Pot is hot lay the whole chicken breast-side-down and brown for four (4) minutes.
  5. Carefully turn the chicken over and brown on the other side as well.
  6. Set the times for 20 minutes, place and lock the lid into place.
  7. Push the pressure button and make sure the vent knob is not venting.
  8. When the chicken is done insert an instant thermometer,  make sure to insert it into the breast and not touching a bone. It should read 165°.
  9. Remove the chicken from the Instant Pot and allow it to rest for ten (10) minutes. Use a very sharp knife and carve up the chicken meat, or use two forks and shred the meat and place into a bowl.
  10. Toast the slider buns in a hot skillet. I brush each bun with a bit of melted unsalted butter and extra virgin olive oil.
  11. Slice ham, grill onions, all of the prep work should be done ahead of time.
  12. Build sliders using chicken, shaved ham, grilled onions, pickles and yellow mustard.
  13. Lastly, add a slice or two (2) of Swiss cheese.
  14. Serve and enjoy.
