I have long been a fan of Asian Chicken Salads when we go out to eat at various main stream restaurants. It’s all about the combination of the grilled chicken and that sweet yet spicy Ginger Sesame salad dressing. I quickly learned that very same salad I thought was a healthier option really wasn’t. Often it was topped with crunchy noodles, tons of dressing and deep fried chicken tenders. Once I saw the calorie count on my favorite salad weighing in at over 1,000 calories I decided it was high time I make some changes and create my own. I add cucumbers and carrots for extra crunch, leave off the crunchy noodles and always use grilled chicken instead of the higher calorie fried versions typical of these salads. Below is my favorite low fat Ginger Sesame Dressing.
Grilled Chicken Salad with Ginger Sesame Dressing Recipe
Ingredients:
Salad:
- 4 – 6 cups mixed greens
- ½ lb.grilled chicken, cut in bite size pieces
- 1 cucumber, sliced
- 1 carrot sliced or diced
- 3 green onions, thinly sliced
- ¼ Cup Sliced Roasted Almonds (optional)
Ginger Sesame Dressing:
- ¼ Cup Balsamic Vinegar
- 2 Tablespoons Low Sodium Soy Sauce (or Bragg’s Liquid Aminos)
- 2 Teaspoons Brown Sugar Substitute
- ⅛ Cup Extra Virgin Olive Oil
- 1 Teaspoon Roasted Minced Garlic
- 1 teaspoon ground ginger
- 2 Teaspoons Toasted Sesame Seeds
Directions:
- Add the salad greens, grilled chicken, cucumber, carrot, onion, and almonds to a large bowl.
- Place the dressing ingredients in a cruet. Put the lid on the cruet and shake vigorously to combine.
- Pour the dressing over the salad and toss to coat.

- ½ pound grilled chicken cut in bite size pieces
- 1 cucumber sliced
- 1 carrot sliced or diced
- 3 green onions thinly sliced
- ¼ Cup Sliced Roasted Almonds optional
Ginger Sesame Dressing:
- ¼ Cup Balsamic Vinegar
- 2 Tablespoons Low Sodium Soy Sauce or Bragg’s Liquid Aminos

- ⅛ Cup Extra Virgin Olive Oil

the ginger is missing from your ingredients for the dressing Alea. How much ginger do you use??

Thanks for pointing that out. It should be 1 teaspoon of ground ginger.
