Menu Plan Monday – The Leftovers Edition

This week is unusual, both because of the large quantities of leftovers and because I will be out of town visiting my Dad for 3 of the days, leaving my husband and teenagers to fend for themselves (taking my 3 yo with me). I will make large meals on Wednesday and Thursday, so they can feast on leftovers if they choose.

Monday – Use leftover mashed potatoes and peas in Shepherd’s Pie. Serve with wild rice and Herbed Asparagus.

Tuesday – Use leftover ham and asparagus to make Ham and Asparagus Frittata. Serve with fruit salad.

Wednesday –  Use leftover ham and peas to make Scalloped Potatoes with Ham and Peas.

Thursday – Use the ham bone to make Split Pea Soup. Serve it with salad.

Friday – YOYO (which means You are On Your Own – hope you don’t starve!)

Saturday – YOYO

Sunday – YOYO

    We had a lovely Easter dinner this year of nachos, so no leftovers. I have been fixing my daughter's favorite meals before she leaves for China, and she selected nachos! Hopefully we'll be back to ham next year.

    We have already eaten all ours, but since our meal was quite small so not so many left over.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
