Menu Plan – The Mama is Sick Edition

greenmpm[1]Last week’s menu had my family scheduled to enjoy Mother’s Day Dinner with friends. Unfortunately, Rew and I both came down with a cold on Saturday. My older kids demonstrated their mad microwaving skills and heated up a freezer meal to make Pulled Pork for my Mother’s Day dinner. Last week, I saw several recipes that I want to try, but I have decided to follow my kids example and serve dinner from the freezer while I am fighting this cold.

Monday – Finish the leftover Vegetable Garden Minestrone Soup from last Friday. Serve it with salad.

Tuesday – Pull some precooked chicken and rice from the freezer to make Chicken and Rice Soup. Serve it with salad.

Wednesday – Enchiladas, Mexican Rice, and Black Beans (recipes coming soon).

Thursday – YOYO Dinner

Friday – Going out for dinner. Shocking, I know! I can’t even remember the last time we went out to dinner.

Saturday – Use precooked hamburger from the freezer, leftover rice and black beans, and whatever else I can rummage from the fridge and pantry to make a version of Miracle Leftover Chili

Sunday – Grilled Ahi Tuna, Brown Rice, and Grilled Asparagus

How do you feed your family when you are sick? Do you let them fend for themselves? Pull out a box of Mac ‘n Cheese? Order in pizza and Chinese food? Or do you have a few freezer meals that you can fall back on?

    I hope you're feeling better and that your meal out (tomorrow?) is awesome.
    We went out to a steakhouse last week because they had sent us a $50 gift card (yup, $50!). Suffice to say, the meal was still extremely expensive, even with that size discount 🙂

    Hope you are feeling better soon.

    Depends on how bad I am sick if I say "fend for yourself" or "I think I can get a pizza out of the freezer".

    Frozen pizza is a staple in our house! 🙂

    YES to all your questions at the end except the last one! I don't have any pre-cooked/prepped meals in the freezer, unless frozen pizza counts. ha, ha! Good for you for having some food cooked, frozen and ready to cook as needed! I'll have to make an effort to do this…adding it to my To Do List now!

    I came across your blog in a search for OAMC recipes and this weekend I made the pulled pork following your recipe…it turned out great!! and it was so easy! I said to my husband, "if I knew it was this easy i would have starting making this a long time ago!" anyway, I wanted to say Thanks for posting such a tasty and easy recipe.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
